Do you want to make vegetarian patties that hold together, then I have the recipe for you. Protein-rich and flavorful and you can choose the flavor you want. Mustard gives a good taste I think, but why not use dill, cumin, ice-spice... Haha, not at the same time, of course :) I served the patties with eggplant-feta gratin.
Tofu Mustard Patties
200 g firm tofu
vegetable oil
1 small red onion, diced
1/4 tsp salt
0.5 dl ground almonds
0.5 tbsp mustard
1 tbsp peanut butter
pinch of black pepper
Mash the tofu and onion with a hand blender. Mix in almond flour, mustard, peanut butter and pepper. Shape the mixture into 4 patties and place on an oiled baking sheet and bake at 200 degrees C until golden brown, ca. 20-30 minutes.
Tofu Senapsbiffar
200 g fast tofu
vegetabilisk olja
1 liten rödlök, tärnad
1/4 tsk salt
0,5 dl mandelmjöl
0,5 msk senap
1 msk jordnötssmör
nypa svartpeppar
Mosa tofu och lök med en stavmixer. Blanda i mandelmjöl, senap, jordnötssmör och peppar. Forma blandningen till 4 biffar och lägg dem på en oljad bakplåt och grädda i 200 C grader tills de är gyllenbruna, ca. 20-30 minuter.
