I recently realized that I have never shared with you my ratatouille recipe. How can I not have shared it with you? And I've made ratatouille so, so many times. Ratatouille is easy to make and it's worth making a bigger amount at a time, because it's so good and will be tastier the following days after you've made it. Well, here's the recipe, better late than never :)
Ratatouille
olivolja
1 röd lök, hackad
1 vitlöksklyfta, fint hackad
1 aubergine
1 zucchini
1 röd paprika
1 grön paprika
2 burkar krossade tomater
blandade torkade örter
salt
svartpeppar
socker
Värm olja i en stor kastrull och fräs lök och vitlök. Skär grönsakerna i kuber ca 2 x 2 cm stora bitar. Tillsätt grönsakerna och fräs någon minut till. Blanda i krossade tomater och rör om. Låt sjuda i 20-30 minuter. Rör om då och då. Krydda med örter, salt, peppar och socker.

1 eggplant
1 zucchini
1 red pepper
1 green pepper
2 cans crushed tomatoes
mixed dried herbs
salt
black pepper
sugar
Heat oil in a large saucepan and fry the onion and garlic. Cut the vegetables into cubes about 2 x 2 cm large pieces. Add the vegetables and fry for a couple of minutes. Mix in crushed tomatoes and stir. Allow to simmer for 20-30 minutes. Stir every now and then. Season with herbs, salt, pepper and sugar.
